Healthy yet tasty ride snacks are so hard to find! If you are tired of store-bought energy bars and jerky, and are looking for innovative, easy to make, nutrient rich snacks, here are a few options. We picked ones containing two lesser-known super foods that are fantastic for anyone pursuing an active lifestyle, but are especially great for winter cyclists because of their immunity boosting capabilities.

We partnered with the Healthygeek (@thehealthygeek), also a woman run business out of Seattle, for these recipes. Healthygeek Organics specializes in curating clean and organic plant-based superfood products from around the world. Camu Camu : Camu Camu, a Peruvian Superfood is a popular berry that is native to the Amazon rainforest. It has been touted for its high Vitamin C content and has gained a lot of popularity in recent years. Camu Camu’s high Vitamin C content (higher than Oranges) gives it potent anti-inflammatory and antimicrobial properties! Fresh Camu berries have a strong tart flavor, which is why they are commonly available as a powdered superfood!

Camu Camu Stuffed Dates

Try one of these stuffed dates and you are guaranteed to come back for a second date ;) These dates make for the perfect bite sized healthy dessert, and are overloaded with flavor. The orange zest and Camu Camu will give you a nice kick of Vitamin C to boost your energy levels and keep your immune system strong as we enter the fall season.  

Ingredients

  • -22 Medjool Dates

  • -4 oz Cream Cheese

  • -zest of 1 orange

  • -¼ tsp cinnamon 

  • -1 tsp HealthyGeek Camu Camu Powder

  • -pomegranate

Directions
-Make a slit in each date, to remove the pit 
-In a bowl, combine cream cheese, orange zest, cinnamon, and Camu Camu. Mix well so it is all incorporated. 
-Stuff each date with the filling 
-Top the dates with pomegranate seeds and enjoy!

Camu Camu Yogurt Bark

Yogurt bark is the perfect snack to grab and go for a mid-day ride! Prep some over the weekend and you are set for the rest of the week! It is so versatile and can be made with any of your favorite fresh or frozen fruits. Add in Camu Camu for some extra Vitamin C, and an instant energy boost!  

Ingredients

  • 1 cup greek yogurt (or plant-based yogurt) 

  • 2 tsp HealthyGeek Organics Camu Camu Powder

  • 2 tbsp honey/agave 

  • diced Mango (any fresh/frozen fruit)

  • Blueberries (any fresh/frozen fruit)

Directions

  • Mix together yogurt, Camu Camu, and honey in a bowl. 

  • Spread evenly on the bottom of a baking dish lined with parchment paper. 

  • Add in your chopped fruit to the yogurt. 

  • Freeze for at least 2 hours

  • Leave out for about 2 minutes before eating. Enjoy!

Ashwagandha Cookies

These cookies are super easy to bake, and are the perfect post-ride dessert after a chilly autumn or winter ride. They are vegan, have no added sugar, and include all the incredible stress relieving and calming benefits of Ashwagandha! Feel free to bake a batch on the weekend and use throughout the week as pre/post or mid ride snack :)  

Ingredients (14 cookies)

  • 2 ripe bananas

  • 1 cup rolled oats

  • 1/4 cup chocolate chips

  • 4 tsp Healthy Geek Organics Ashwagandha

  • OPTIONAL: any other mixins you desire (nuts, dried fruits, peanut butter)

Directions
-Preheat oven to 350 degrees F. 
-Mash bananas in a big mixing bowl. Fold in rolled oats, Ashwagandha, chocolate chips ⁣and any other mixins. Mix well.
-Place 1 tbsp balls of the dough on a greasing baking tray and slightly flatten.
-Bake for 18-20 mins
